In the mid-1830s, a young Englishman named Marcus Sandys worked in India. He enjoyed eating a local food which always came with a delicious sauce (酱). It tasted like nothing he had tried in England. Before he returned to England, he did his best to find out what the ingredients (原料) were. They included red onions, garlic (蒜), vinegar (醋) and salted fish.
Once home, he met with two chemists who owned a shop close to his home.
He gave them the list of the ingredients and asked them to make the sauce for him. The two chemists, John Wheeley Lea and William Henry Perrins found all the ingredients and mixed them together. They tasted it and described the sauce as terrible! It was poured into a barrel (桶). Mr. Lee and Mr. Perrins waited for Marcus to come and get the barrel, but he never did.
A couple of years later, the two chemists remembered the barrel. They decided to see what the mixture tasted like. They couldn’t believe it! It was delicious! They decided to sell it in their shop. They called their sauce Lea & Perrins.
It takes time to produce such a delicious product. The process begins with keeping red onions and garlic in vinegar for at least 18 months. During that time, the two vegetables soften. Fish called anchovies from Spain are placed in salt for a similar period of time. When ready, the red onions, garlic and anchovies are mixed together in a barrel. The mixture is kept there for six more weeks. In the end, it’s heated to kill bacteria (细菌).
Lea & Perrins can be found in most home kitchens and restaurants. It’s sold in over 130 countries worldwide now.
