Stir-fried tomatoes and eggs is a very common and popular dish in China. You don’t need any previous cooking experience to be able to make this dish. Tips for Making This Dish
● My rule of thumb for a good tomato-to-egg rate is: for every one large tomato you use, use one egg.
● Don’t overcook the scrambled eggs while it’s in the pan. Once you have it in the hot pan, let it cook untouched until you start to see the edges starting to cook, then use your spatula(锅铲) to push the eggs towards the center of the frying pan. I usually just push from 4 corners, then tilt(倾斜) the pan so that the raw eggs runs onto the hot pan and I repeat it again, push it to the center.
● When the eggs look about 75% done, you can probably give it one more flip(翻) and then take it off the heat. While you are plating it, it will continue to cook.

It’s pretty much the thrift store(旧货店) dream: to find a rare, long-lost treasure on a crowded shelf, on sale for a cheaper price.
That’s what happened at the Hotline Pink Thrift Shop, where Wendy Hawkins came across an otherwise ignored piece of art. The item turned out to be a 1950s woodcut print that was created and signed by Spanish painter Salvador Dalí. It is part of a series of 100 illustrations describing Dante’s The Divine Comedy, a 14th-century Italian poem. Dalí was best known for his melting-clock paintings and was easily recognized by his stiff upturned mustache.
Dalí was first appointed by the Italian government to make the series in honor of Dante’s birthday celebration, but anger over a Spanish painter taking on an Italian poet’s work led officials to drop it. However, the artist had become so taken by the project that he couldn’t let it go. In the end he created a series of 100 watercolor paintings — one for each chapter of Dante’s book — that were reproduced as woodcuts.
“And that is what Wendy found,” said Melanie Smith, who owns an art gallery just down the street from the thrift store. She was the first person Hawkins consulted to learn more about what she’d discovered.
In all, Smith worked on authenticating(甄别) the piece for over a week. “It is very difficult to authenticate Dalí’s works because there are so many nuances(微妙之处),” Smith explained He also authorized a ton of prints, which he sometimes signed.

On the night of 14th June 1904, New York’s Chinatown was in a deep gloom(低迷). For the past 20 years, the restaurants were filled with those crazy about a taste of real Chinese cooking “chop suey”. As he explained, “each Chinese cook has his own recipe. The main parts are pork, bacon, chicken, mushroom, bamboo shoots, onion, and pepper, while accidental ones are duck, beef, salted black beans etc. Yet it is often considered by Westerners that this is a ‘national dish of China’ more than any other dish they’ve known.”
Although a hyperbolic way to introduce this dish, it clearly showed that chop suey was indeed of Chinese origin. Where exactly its roots lay has been debated; but it was probably first cooked in Taishan, Guangdong, where most early immigrants to America had grown up. In 1866, the journalist Allan Forman noticed it as a delicious dish despite its “mysterious nature”, and nine years later, the first recipe appeared in magazines, with some un-Chinese ingredients thrown in.
It was not long before a myth making began. In 1896, Li Hongzhang visited New York, and newspapers mistakenly reported that while refusing Western dishes at a banquet(宴会), he had enthusiastically accepted a plate of chop suey. This caused a great hit, and many who never heard of it before simply assumed that it was introduced to the US by Li Hongzhang, which accidentally promoted the dish’s popularity.
