    Having worked at a 7-Eleven store for two years, I thought I had become successful at what our manager calls “customer relations”. I firmly believed that a friendly smile and an automatic “sir”, “ma’ma”, and “thank you” would see me through any situation that might arise, from comforting impatient or unpleasant people to apologizing for giving out the wrong change. But the other night an old woman shattered my belief that a simple and plain response could smooth over the rough spots of dealing with all kinds of customers.
    The moment she entered, the woman presented a sharp contrast to our shiny store with its bright lighting and neatly arranged shelves. Walking as if each step were painful, she slowly pushed open the glass door and hobbled(蹒跚)down the nearest aisle. She coughed dryly, wheezing (气喘吁吁)with each breath. On a forty-degree night, she was wearing only a faded dress, a thin sweater too small to button, and black slippers with the backs cut out to expose calloused (满是老茧的) heels. There were no stockings or socks on her blue-veined legs.

    After wandering around the store for several minutes, the old woman stopped in front of the rows of canned vegetables. She picked up a can of corn and stared with a strange intensity at the label. At that point, I decided to be a good, polite employee and asked her if she needed help. As I stood close to her, my smile became harder to maintain; her red-rimmed eyes were partially closed by yellowish crusts(痂);her hands were covered with layer upon layer of dirt, and the stale(陈腐的)smell of sweat rose from clothes.

    “I need some food,” she muttered in reply to my bright “Can I help you?” “Are you looking for corn, ma’am?”

    For a second, I was tempted to say, “Take the corn.” But the employee rules flooded into my mind: Remain polite, but do not let customers get the best of you. Let them know that you are in control. For a moment, I even entertained the idea that this was some sort of test, and that this woman was someone from the head office, testing my loyalty. I responded dutifully, “I’m sorry, but I can’t give away anything for free.”

    The old woman’s face collapsed a bit more, and her hands trembled as she put the can back on the shelf.

    Today China is the world’s biggest consumer of wheat. But it wasn’t always that way.

    Wheat only came to the area now known as northern China toward the end of the Neolithic (新石器) period, some 4,600 years ago. Initially, wheat didn’t seem to be so delicious and had been treated as a crop of desperation rather than a cooking delight. The first farmers of northern China primarily grew millet (粟), starting as early as 11,500 years ago. By the time of the Tang dynasty, wheat had replaced millet, becoming a major crop. But relatively little was known about exactly why this shift occurred.

    In an attempt to track the answer, I accumulated (积累) a collection of nearly 1,200 data points covering more than 50 sites from the mid-Neolithic, about 9,000 years ago, to the collapse of the Eastern Han dynasty in 220 AD. The sites were across 8 modern provinces, ranging from Gansu province in the northwest to Shandong province in the east.

    One possible explanation is a major climate shift, called the Holocene Event 3, which happened 4,000 to 4,500 years ago. At that time, the climate became colder and drier across continents, causing damage to crop production.
    On top of this, the late Neolithic period was also a time of rapid population growth around the world. With an ever-increasing population and unsteady crop production, it is reasonable to assume that Neolithic farmers in northern China were struggling.
    Wheat, it turns out, actually needs more water than millet, making it seem a poor choice for a dry period of history. But importantly, it can be sowed after millet has been harvested. That, we think, is the most likely reason why the people across northern China started to grow wheat.
    From more extreme weather to changing coastlines, climate change has always brought unexpected and sometimes dramatic changes to societies. In this instance, the consequence of the Holocene Event 3 in northern China proved, eventually, delicious.

    A sheet of transparent new material at a University of Maryland lab looks like it might be plastic. But it’s actually wood—and it could eventually be used to make energy-efficient windows or even see-through buildings.
    "Compared to glass, wood has lower heat conductivity, and it's lighter, stronger, and more environmentally friendly," says Liangbing Hu, a materials science professor at the University of Maryland and one of the authors of a new study of the material.
    The idea is to employ the material in buildings. With a window made from transparent wood instead of glass, for example, a building would take less energy to heat and cool. Because of the structure of the wood, the windows could also reduce glare from the sun while allowing in natural light.
    Researchers have experimented with transparent wood in the past, but the new method is more sustainable. Other methods usually put the wood in a chemical compound Nacl to remove lignin, part of the wood that
    gives it structure. But this can weaken the wood, and it produces waste that is hard to recycle. Hu and his team made slight changes to the process so it doesn't fully remove the lignin. By brushing hydrogen peroxide(过氧化

    物) over the wood and leaving it under a UV light, they removed only the parts of the lignin that give it color. The result is transparent wood that can be coated in epoxy(环氧树脂).

    It’s just one of a number of ways scientists and engineers are rethinking how we can use this renewable resource in construction. Skyscrapers made entirely out of wood are gaining popularity in cities around the world. And scientists recently discovered a technique to grow wood in a lab, opening up the possibility of using wood without having to cut down a forest.
    The transparent wood is 50% stronger than previous transparent wood and could even be used to build load-bearing walls in a building. It could also potentially be used in other ways, such as layers used in solar cells. A new company called InventWood is working to commercialize the technology.
