The first paragraph has a qute: “Yu are what yu eat.” In pairs, discuss what yu think this saying means. Then read the article t see if yu share the same ideas as the authr. Meanwhile, fill in the chart with the main idea f each paragraph.
    Culture and Cuisine
CULTURE AND CUISINEThe French authr Jean Anthelme Brillat-Savarin nce wrte, “Tell me what yu eat, and I will tell yu what yu are.” Put mre simply, this means “Yu are what yu eat.” Mst peple tday relate this saying t healthy eating. Hwever, Brillat-Savarin was actually referring t ur persnality, character, and culture.Certainly, in many ways this seems t be true. Chinese cuisine is a case in pint. Prir t cming t China, my nly experience with Chinese cking was in America, with Chinese fd that had been changed t suit American tastes. Fr example, America’s mst ppular Chinese dish is General Ts’s chicken, which cnsists f fried chicken cvered in a sweet sauce, flavured with ht red peppers. This is prbably nt an authentic Chinese recipe, hwever, s it cannt tell us much abut the Chinese. On the ther hand, it des tell us a lt abut Americans. It tells us, fr example, that Americans lve bld, simple flavurs. And, since the dish was als invented recently, it tells us that Americans are nt afraid t try new fds.
    Example:General Ts’s chicken
    American’s recipe
    American’s persnality
What are his cmments twards these cuisines?
Later, I had a chance t experience authentic Chinese fd by cming t China. When my family and I had just arrived in China, we went lking fr a gd place t eat in Beijing. A Sichuan restaurant had been recmmended t us by a friend, and finally, we fund it. Tired, hungry, and nt knwing a wrd f Chinese, we had n idea hw t rder, s the chef just began filling ur table with the best fd we had ever eaten. With this, we had the pleasure f experiencing an entirely new taste: Sichuan peppercrns. The fd was wnderful and different, but what was even mre imprtant was the friendship ffered us.
Why did the writer feel friendship frm the fd they had in Beijing?
Paragraph 3-6 is abut authr’s experience f fds in different regins f China.
We sn mved t Shandng Prvince in the eastern part f Nrth China. My favurite dish there was biled dumplings served with vinegar. I bserved that family is imprtant t the peple there. It has becme a favurite traditinal dish f the peple in Nrth China, where making dumplings has always been a family affair with everyne — frm the yungest t the ldest — jining in t help. Later, I learnt that the mst famus fd in Shandng is pancake rlls stuffed with sliced Chinese green nins. Then we mved t nrthern Xinjiang. Sme f ur friends were Kazak and Inner Mnglian. These grups traditinally wandered the pen range n hrses. As a result, their traditinal fds are what yu can ck ver an pen fire — usually biled r rasted meat, such as lamb kebab.
Our travels then tk us t Suth China, and then n t central China. In each place we went, we experienced wnderful lcal dishes, frm Guangdng’s elegant dim sum — small servings f fd in bamb steamers — t the exceptinal stewed ndles in Henan. Everywhere, the fd was as varied as the peple. Hwever, ne thing is always true: Thrugh fd, Chinese peple everywhere shw friendship and kindness. At a minimum, the kinds f fd lcal peple cnsume tell us what they grw in their regin, what kinds f lives they lead, and what they like and d nt like. Culd we als say, fr example, that thse wh like bld flavurs are bld themselves? Or, that thse wh like spicy fd tend t have a ht temper? Maybe. Maybe nt. What we can say, hwever, is that culture and cuisine g hand in hand, and if yu d nt experience ne, yu can never really knw the ther.
WHAT is a fd and WHAT is nt a fd ?HOW fd is prepared and by whm?WHO eats the fd and with whm?HOW ften and WHEN fds are eaten?D peple have taste preferences r special meaning f fd?
Fllwing the authr’s steps, we have a brief study abut fds in different regins f China. Read the last paragraph carefully. Think abut these questins with the passage and yur wn knwledge.
It tells peple that Americans lve bld, simple flavrs and are nt afraid t try new fds.
Because it had been recmmended t them by a friend.
They traditinally wandered the pen range n hrses.
    1. What des the dish General Ts’s chicken tell abut Americans?
    3. What did the writer find is imprtant t peple in China while he was in Shandng?
    4. Why did peple in Xinjiang enjy cking ver an pen fire?
    5. What des the fd lcal peple cnsume tell the writer?
    2. Why did the writer and his family g t a Sichuan restaurant in Beijing?
It tells us what peple grw in their regin and what kinds f lives they lead, what they like r dislike.
General Ts’s chicken is named fr Ts Tsung-tang, a 19th-century general wh is ne f their best-knwn histrical figures. But althugh many Chinese dishes are named after famus persn, there is n recrd f any dish named after Ts. In 1949, Chiang Kai-shek and Natinalist Party fled t the island f Taiwan. They tk with them many talented peple, including a number f ntable chefs, and fremst amng them was Peng Chang-kuei. He created this dish in the1950s, and brught it with him when he mved t the U.S. in 1973, making it sweeter fr American palates. This versin is adapted frm the riginal, ht and sur and lacking the sweetness f its Americanized cunterpart.
Use the infrmatin frm the text t cmplete the table belw.
Even in immigrant cuntries like American, different ethnic grups keep their wn fd habits. Read the infrmatin belw, it is abut different peple’s cre fds. Have yu ever tried these cre fds in yur meals?
Match the causes t the effects belw. Then find mre examples frm the text.
Effect The chef just began filling ur table with the best fd we had ever eaten.Their traditinal fds are what yu can ck ver an pen fire.Chinese fd in America is changed t suit American tastes.
CauseThe flavur preferences f Americans ften differ frm thse f the Chinese. We had n idea hw t rder fd. These grups traditinally wandered the pen range n hrses.
Understand cause and effectSmetimes tw ideas are related t each ther by cause and effect. That is, ne thing causes smething else t happen. Cause-and-effect relatinships can be direct. Fr example, “It was raining. s l tk my umbrella.” Hwever, sme cause-and-effect relatinships are nt direct, and sme may als have mre than ne cause r effect.
    4. … family is imprtant t the peple there (Shan Dng).……
    D. Making dumplings has always been a family affair with everyne.……
What cnclusin des the authr get after his experience in China?
culture and cuisine g hand in hand
    1. On the ther hand, it des tell us a lt abut Americans.
I d hpe I can be chsen as a spkesman fr plar bears. I did call her last night, but I didn’t get thrugh. D be careful when yu are crssing the street next time.
    2. Tired, hungry, and nt knwing a wrd f Chinese, we had n idea hw t rder, s the chef just began filling ur table with the best fd we had ever eaten.
Tired, hungry, and nt knwing a wrd f Chinese是we had n idea ... 同时,前面部分又和s the chef just began ... Tired and hungry, the man refused t g n with the wrk. Busy with his wrk, he has n time t g t the mvie.
Fr a mment I just std there, and saw the deep water, afraid.
