CULTURE AND CUISINEThe French authr Jean Anthelme Brillat-Savarin nce wrte, “Tell me what yu eat, and I will tell yu what yu are.” Put mre simply, this means “Yu are what yu eat.” Mst peple tday relate this saying t healthy eating. Hwever, Brillat-Savarin was actually referring t ur persnality, character, and culture.Certainly, in many ways this seems t be true. Chinese cuisine is a case in pint. Prir t cming t China, my nly experience with Chinese cking was in America, with Chinese fd that had been changed t suit American tastes. Fr example, America’s mst ppular Chinese dish is General Ts’s chicken, which cnsists f fried chicken cvered in a sweet sauce, flavured with ht red peppers. This is prbably nt an authentic Chinese recipe, hwever, s it cannt tell us much abut the Chinese. On the ther hand, it des tell us a lt abut Americans. It tells us, fr example, that Americans lve bld, simple flavurs. And, since the dish was als invented recently, it tells us that Americans are nt afraid t try new fds.

Later, I had a chance t experience authentic Chinese fd by cming t China.When my family and I had just arrived in China, we went lking fr a gd place t eat in Beijing. A Sichuan restaurant had been recmmended t us by a friend, and finally, we fund it. Tired, hungry, and nt knwing a wrd f Chinese, we had n idea hw t rder, s the chef just began filling ur table with the best fd we had ever eaten. With this, we had the pleasure f experiencing an entirely new taste: Sichuan peppercrns. The fd was wnderful and different, but what was even mre imprtant was the friendship ffered us.

Our travels then tk us t Suth China, and then n t central China. In each place we went, we experienced wnderful lcal dishes, frm Guangdng’s elegant dim sum — small servings f fd in bamb steamers — t the exceptinal stewed ndles in Henan. Everywhere, the fd was as varied as the peple. Hwever, ne thing is always true: Thrugh fd, Chinese peple everywhere shw friendship and kindness.At a minimum, the kinds f fd lcal peple cnsume tell us what they grw in their regin, what kinds f lives they lead, and what they like and d nt like. Culd we als say, fr example, that thse wh like bld flavurs are bld themselves? Or, that thse wh like spicy fd tend t have a ht temper? Maybe. Maybe nt. What we can say, hwever, is that culture and cuisine g hand in hand, and if yu d nt experience ne, yu can never really knw the ther.

General Ts’s chicken is named fr Ts Tsung-tang, a 19th-century general wh is ne f their best-knwn histrical figures. But althugh many Chinese dishes are named after famus persn, there is n recrd f any dish named after Ts. In 1949, Chiang Kai-shek and Natinalist Party fled t the island f Taiwan. They tk with them many talented peple, including a number f ntable chefs, and fremst amng them was Peng Chang-kuei. He created this dish in the1950s, and brught it with him when he mved t the U.S. in 1973, making it sweeter fr American palates. This versin is adapted frm the riginal, ht and sur and lacking the sweetness f its Americanized cunterpart.
