The study was carried ut by Martin Hch, the leading expert n fd waste and the authr f several previus studies n the subject. Reflecting n the study’s findings, Hch said, “It means stpping criticizing cnsumers. Sure, cnsumers are part f the prblem, but they’re nt the prblem.”
In the past, Hch didn’t master gd data, particularly frm the private factries, but relied n numbers cllected by the fd industry fr purpses ther than tracking waste. This time, hwever, Hch wrked directly with cmpanies at all stages alng the fd prductin chain and interviewed ver 700 experts in the industry. Clearly he fund it hard t believe what he was seeing.
This is what they fund: Fd prcessing causes 34% f fd waste. This is fllwed by prductin, which causes 24%. Next is manufacturing at 13%, then htels and restaurants at 9%.
