The United States is knwn fr jazz and blue jeans. But travel t Paris and ask an average French citizen abut American cuisine and he's likely t answer, “McDnalds.” Ask any American citizen n any American street the same thing and I'm afraid yu'd get the same answer, r smething clse t it.
Hamburgers, ht dgs and fries are all fine, but with American malls and ther utlets standardizing everything frm clthing t fd, the sad truth is that American cuisine is becming mre hmgeneus—all the same—n matter where yu live. True, many Americans are eating mre multiple fds these days, but these are largely the cuisines f immigrant grups, and they are quite likely t be affected by hmgenizatin f American cuisine.
S what exactly is American cuisine? Well, t sme extent it is a reflectin f ur melting pt culture, meaning that Eurpeans made huge cntributins in the frm f wheat, dairy prducts, prk, beef and pultry. But American cuisine als includes prducts that nce were knwn nly t the New Wrld, including ptates, crn, pumpkins, sweet ptates, and peanuts.
The ne regin f the cuntry where yu still find all these things in daily use is the Deep Suth. The Suth lst the Civil War, but children f the sutherners are winning the battle t preserve and thrw themselves int their cking traditins—and in this case ne f the few cuisines can truly be called American, which is why we're pleased t have Lw Cuntry Cuisine in this issue f fd innvatin. That's right—grits and gravy(粗燕麦粉和肉汁) are back in a big way in cities like Charlestn and Savannah. The truth is, they never really left, but up until a decade ag Lw Cuntry Cuisine was mre cmmn at hme than in restaurants.
In fact, a large number f turists nw g t the lwer Atlantic regin in rder t experience this extrardinary cuisine fr themselves. Time will tell whether Lw Cuntry Cuisine becmes ppular in ther regins f the cuntry in the way that, say, Italian cuisine has, but it's amazing and heartening t see ne f ur true cultural treasures enjying renewed ppularity in these increasingly hmgeneus times.
