    Fr the study,a 170-persn cnsumer grup was created t evaluate 160 tmates representing 101 varieties,based n qualities such as “verall liking” and “flavr degree”.The results pinted t dzens f chemical cmpunds f interest,and further research using a statistical mdel discvered 33 flavr cmpunds cnnected with cnsumer liking,such as glucse(葡萄糖).The reasn why mdern tmates dn’t taste gd anymre is that a ttal f 13 f these flavr-assciated cmpunds “were significantly reduced in mdern varieties”,their paper wrte.Mrever,the researchers fund that smaller fruit tended t have greater sugar cntent,suggesting that “selectin fr mre sizable tmates has cst sweetness and flavr”.
    Based n this knwledge,Huang and Prfessr Harry Klee f the University f Flrida studied the whle genmes f 398 varieties f tmat,identifying abut 250 psitins f genes n a chrmsme(染色体),which cntrlled tmat flavr.
    “We’re just fixing what has been damaged ver the last half century t push them back t where they were a century ag,” said Klee in a statement.“We can make the supermarket tmat taste nticeably better.” Klee said new tmat varieties with better flavr culd be ready in three t fur years.In additin,“the genes and pathways identified here in the tmat almst certainly pint t pathways wrth researching fr imprvement f flavr quality in ther fruit crps,” they wrte.
