Dandan noodles are a famous dish from well-known Sichuan cuisine. But Li Hongkai, a famous chef in Zigong City, took the dish to a new level and brought it to international fame.
His golden thread noodles were recognized by Guinness World Records as the thin nest handmade noodles in 2007, which have won the hearts of customers. The dough is so thin that one can read the newspaper through it. The thin nest noodles can go through the eye of a net- de at once. His noodles don't get mushy in boiling water, but they are easy to melt in one's mouth. Despite their extraordinary characteristics, there is nothing special about the ingredients. But Li has a secret weapon: 17 years of practice.
Since 1990, he has got up at 4 o'clock in the morning to prepare the dough. As a beginner, Li slept on the restaurant's chairs to save time. After several years, he learned to control his body strength, which is necessary for the slicing techniques. He also developed his own kneading technique and improved the recipe. Years in the kitchen had paid off. His concoction (调制品) was first acknowledged by the World ' Association of Chefs' Societies, when he fitted six noodles through the eye of a needle in 1994. In the following years, he continued to polish his skills and won several cooking competitions.
After his golden thread noodles became popular, Li received many offers overseas. The restaurant he used to work for in Beijing also wanted him back with a handsome salary. But he decided to stay in his hometown and develop the native Salt Gang's dishes. “From my experience of working in large cities, most customers prefer genuine Sichuan snack,” said Li.

As the climate crisis worsens, some cities may turn to parks. Parks have long been places for people surrounded by the gray of asphalt and concrete to get a small deal of green. As cities increasingly feel the influences of rising seas and temperatures, city planners are re starting to think of the roles of parks.
“There has been a quiet and intelligent move to use parks to help cities adapt to the realities of climate change,” said Diane Regas, CEO of an organization that works to create neighborhoods and national parks. “it's more than shade trees that are helping fight climate change. Parks can help reduce coastal flooding, capture carbon and promote a sense of come-munity among those that will be affected by extreme weather.” Cities plan to build more parks that can reduce climate change effects like flooding and poor air quality.
All of the park-gray asphalt in cities collect heat—a lot of it. A study mapped the hottest areas of most cities and found that extreme heat was nearly always combined with the urban areas paved with lots of asphalt, Large parks cooled certain parts of the city by as much as 17 °F. That kind of cooling can be a lifesaver given more than 600 annual deaths caused by heat-related illnesses. There is no denying that climate change is real. And our parks are assuming the great responsibility and big challenge in the ways we can do the best. A new study finds constantly engaging in negative thinking patterns may increase the risk of dementia (痴呆). In the study of people aged over 55. Researchers found repetitive negative thinking (RNT) was linked to memory decline as well as the deposition of harmful brain pro-reins linked to dementia.
Lead author Dr Natalie Mar chant said, “Depression and anxiety in mid-life and old age are already known to be risk factors for dementia. Here, we found that certain thinking patterns involved in depression and anxiety could be an underlying reason why people with those d is orders are more likely to develop dementia.”
Over a period of two years, the study participants responded to questions about how they typically think about negative experiences, focusing on RNT patterns like reflection on the past and worry about the future. The participants also completed measures of depression and anxiety symptoms. Their cognitive function was assessed, measuring memory, attention, spatial cognition and language. Some of the participants also underwent PET brain scans, measuring deposits of two proteins which cause the most common type of dementia, when they build up in the brain,
The researchers found that people who exhibited higher RNT patterns experienced more cognitive de c lines over a four-year period and de c lines in memory, which are among the earlier signs of dementia, and they were more likely to have protein deposits in their brain. “We think that repetitive negative thinking may be a new risk factor for dementia as it could con-tribute to dementia in a unique way,” said Dr Marchant.
Co-author Dr Gael Chételat commented, “Our thoughts can have a biological impact on our physical health, which might be positive or negative. Mental training practiced such as deep thought might help promote positive thinking, and down-regulate negative associated mental plans. Looking after your mental health is important, and it should be a major public health priority, as it ' not only important for your health and well-being, but it could also impact your eventual risk of dementia.”

Dandan noodles are a famous dish from well-known Sichuan cuisine. But Li Hongkai, a famous chef in Zigong City, took the dish to a new level and brought it to international fame.

A new study finds constantly engaging in negative thinking patterns may increase the risk of dementia (痴呆). In the study of people aged over 55. Researchers found repetitive negative thinking (RNT) was linked to memory decline as well as the deposition of harmful brain pro-reins linked to dementia.
Lead author Dr Natalie Mar chant said, “Depression and anxiety in mid-life and old age are already known to be risk factors for dementia. The researchers found that people who exhibited higher RNT patterns experienced more cognitive de c lines over a four-year period and de c lines in memory, which are among the earlier signs of dementia, and they were more likely to have protein deposits in their brain. “We think that repetitive negative thinking may be a new risk factor for dementia as it could con-tribute to dementia in a unique way,” said Dr Marchant.
Co-author Dr Gael Chételat commented, “Our thoughts can have a biological impact on our physical health, which might be positive or negative. Mental training practiced such as deep thought might help promote positive thinking, and down-regulate negative associated mental plans. Looking after your mental health is important, and it should be a major public health priority, as it ' not only important for your health and well-being, but it could also impact your eventual risk of dementia.”
