    I've handled chopsticks skillfully for decades. While it used to amuse me, it mildly annoys me now that Chinese react with astonishment to see a foreigner handle them — as if someone from a country that put a man on the moon would somehow be incapable of handling two simple sticks. As you can see, China's influence stretched far and wide long before opening-up in the late 1970s or today's Belt and Road Initiative. So the idea that most foreigners cannot use chopsticks is, simply put, fiddlesticks.
    My first exposure to chopsticks came way back in the 1960s via the elementary piano tune known as Chopsticks, which aroused my curiosity as to what the word meant. Not long afterward, my parents introduced me to Chinese food at King Fong Cafe in Omaha, Nebraska, which, I only learned recently, was among the landmarks of the heartland city's once-thriving Chinatown in the early 1900s.
    In fact, I have undergone special kuaizi training (improving skills, for example, by constantly picking up peanuts when I lived with my Chinese tai chi master) and experimentation (exploring the use of chopsticks to snap up popcorn and donuts;I'm working on ice cream).
    But there's one western food for which chopsticks are truly a godsend:salads. After moving to China in 2014, I bought a salad at a convenience store, and the clerk handed me kuaizi. I refused at first, but then thought, “All right” and gave it a try.
    Amazingly useful! I could pick and choose each small piece much more carefully, without having to move awkwardly trying to spear the crispy carrot or cherry tomato and then move it mouth ward.
    Another clear advantage of these simplest of tools is that they regulate the pace and volume of eating. It's much harder to “pig out” by shoveling(铲) food with chopsticks than with a fork and spoon.
    However, in the spirit of globalization, let's not overlook the finer points of knife and fork. In fact, a handy thing about the fork is that everyone can basically use it with each hand. I dare to say that, for Chinese and foreigners alike, switching hands while using chopsticks is not so readily done with confidence.

    “While animals can’t pick out precise numbers, they can understand that more is more. Interestingly, we know now that numerical competence(数字能力)is present on almost every branch of the animal tree of life,” says Andreas Nieder, a neurobiologist from the University of Tuebingen. “Different groups of animals obviously developed this trait(特点)independently from others and that strongly indicates that it has to be of adaptive value.”
    Honeybees, for instance, can remember the number of landmarks they pass when searching for food in order to find their way back to the hive. The last common ancestor between honeybees and primates lived about 600 million years ago. But still, they evolved numerical competence that, in many respects, is comparable to vertebrate(脊椎动物的)numerical competence. Also, for example, male frogs sing “advertisement” calls to attract females. The females, listening for the complexity of their calls, choose the male that sings the most calls.
    Wolves are more likely to hunt successfully if they have the right number of wolves in their pack for the size of their prey(猎物): With prey like deer, only around six to eight wolves are needed, while hunting wild ox requires a pack of nine to thirteen. Their prey also uses this concept to protect themselves from predators — deer tend to live in large herds to reduce the chance of any individual becoming prey. So obviously they are assessing the number of individuals in their groups for their everyday life situations.
    Despite these many examples of numerical competence in animals, this subject has not gotten many first-hand studies. “Many of these behavioral findings in the wild have usually been collected as by-products or accidental findings of other research questions,” says Nieder. He argues that more research needs to be done to fully understand the numerical competence.

    In its best times in the nineteenth century, thatch(茅草屋项) played an important role in protecting British homes from the weather. But new technologies since have led to a rapid decline in thatching, and many of the thatched cottages that remain have been changed beyond all recognition by developers or have run into disrepair, a rather upsetting reminder of a bygone age.
    A Welsh company, however, is trying to breathe new life into some of the last traditional thatched cottages in western Wales by repairing them and letting them out as holiday homes. Called “Under the Thatch", the company is run by Greg Stevenson who lives in his own thatched cottage in Ceredigion. An architectural historian by training, he repairs old buildings in old-fashioned ways.
    All the cottages are in attractive locations around southwest Wales. Unlike most holiday homes, the cottages are let all year round—chiefly because Greg prices them lower than many holiday properties(房屋) and he’d prefer that properties are rented just above cost price than not used at all. And with that comes a bargain or two: it’s not unusual for a property to go for as little as 35 a night. Consequently occupancy for properties with “Under the Thatch "is at 95 percent (the average in Wales is 35 percent).
    Its success has meant that Greg has been able to buy up more old cottages and bring them back into the community. Greg has also diversified from offering only thatched cottages: he now lets out a variety of rare accommodation dotted around western Wales, including a renovated(修复的) train carriage and two gypsy caravans which were used by Romanies.
    Most of his thirty properties are run using environmentally friendly technologies, including solar panels and recycled furnishings.
