Coffee is the morning go-to drink. Globally, over 10 billion kilograms of coffee is produced every year and the demand is continuously growing. However, it is unlikely to produce more coffee if climate change continues and reduces the amount of land available. That's why it's necessary to find alternative methods of producing coffee.
Now, Finland is leading the way to grow its own coffee in the lab without using the beans. The coffee is being produced through cellular(细胞的) agriculture, an innovation that could make growing coffee more sustainable, according to Finland's VTT Technical Research Center.
The man-made coffee is made by using cells from real coffee plants. Research team leader Heiko Rischer said, “Initially a cell culture is started from a plant part (e.g. a leaf). The formed cells are reproduced on a specific nutrient medium. Ultimately, the cells are moved to a bioreactor from which the biomass(生物质) is then harvested. The cells are dried and roasted and then coffee can be tasted.” Added environmental benefits of this kind of coffee is that it will require far less water, will have a smaller transportation footprint, and there will be no pesticides used in the production process.
At this point the coffee being produced is experimental food and has to receive approval from the FDA and European certification. The product is also being refined and needs time to come into commercial production. Although lab-grown meat and dairy is starting to be commercially available, the question is: will people accept a cell-grown replacement to conventional coffee? Only time will tell if the world is ready for a cup of lab-grown coffee.
